RVA Applications to Star at Cheese Science 2002 Conference

In the last two years the RVA has broken away from established starch quality methods, and is now finding novel application in dairy science. Cheese Science 2002 Conference is an ideal forum to take these new RVA applications to both academia and industry.

Professor Lloyd Metzger from the University of Minnesota will present "Production and Evaluation of Process Cheese using the Rapid Visco Analyser", describing how he has used his RVA to manufacture process cheese on a small scale and then analysed the resulting micro-batch to understand its melting characteristics.

Metzger sums up: "The RVA can be used to produce and evaluate process cheese on a small scale. This research will facilitate the rapid and inexpensive assessment of experimental variables which may influence process cheese quality."
