"Production and evaluation of process cheese using the Rapid Visco Analyzer"
presented by
Prof Lloyd Metzger, Assistant Professor of Dairy Food Chemistry,
University of Minnesota, USA.


Prof Metzger's current research interest is to manufacture process cheese on a small scale (less than 30g) using the RVA. This allows rapid and inexpensive assessment of experimental variables, which may influence the quality of process cheese, including composition, type and level of emulsifying salt, manufacturing parameters, and natural cheese characteristics. DIAA members are invited to hear Prof Metzger speak at the CSIRO auditorium, part of the new research complex housing Food Science Australia and CSIRO Molecular Biology at North Ryde.
